Prior to Ayza, Delcros held the esteemed position of sommelier at Manhattan's famous La Grenouille. During his 6-year tenure, Delcros developed an award-winning wine list, trained the entire staff to be knowledgeable about the wines and continually tasted wines from around the world to keep La Grenouille ahead of the curve. Before that, Delcros was sommelier at Princess Grill aboard the Queen Elizabeth 2, which he credits as one of his most memorable professional experiences.
In addition to the QE 2, Delcros was sommelier on board the Seabourn Pride and at Bistro de Paris in Disney's Epcot Center.
